Over 20 years ago while living in Japan's ancient capital Kyoto, Timothy d'Offay became fascinated by tea culture and the tea growing areas around the city. Using Japan as a base, he soon started to explore the tea traditions of Taiwan, Korea, and Hong Kong as well. These experiences led him to start importing tea in the late 1990s from the people and places he had visited and in 2000 he co-founded East Teas at Borough Market with the tea expert Alex Fraser. Since then he has travelled extensively to many of the world's most famous tea producing areas. Timothy is the owner and founder of Postcard Teas.

Jenny Dean has been working with natural dyes for four decades. She lectures on natural dyeing and has written widely on the subject. Her books include Colours from Nature and A Heritage of Colour.
Eve Simmons and Laura Dennison
Eve Simmons and Laura Dennison, both of whom are survivors of eating disorders, are the co-founders of Not Plant Based. Eve and Laura are both full-time journalists; Eve works at the Mail on Sunday and Laura is currently freelance, following a stint at The Press Association.When Laura saw Eve being interviewed on the BBC Documentary Clean Eating's Dirty Secrets she decided to approach her about founding a new website, Not Plant Based. Their website covers a broad range of topics from nutritional advice to restaurant tips, physical fitness to mental health, and features interviews with a wide range of chefs, food writers and influencers, including Jay Rayner, Ella Mills and Adam Richman. Since being founded in September 2016, the blog has received coverage in The Times, the Telegraph, the Metro, the Evening Standard and the Mirror, among others, and it has already attracted a growing social media following.
Dan Doherty has appeared on BBC1's Saturday Kitchen and Channel 4's Sunday Brunch. He is a judge on the BBC1's primetime series Britain's Best Cook. Dan was the Chef Director at London's Duck & Waffle, in the City of London and recently opened his own restaurant, The Royal Oak, in Marylebone, Central London. He won Tatler's Rising Star Chef award at their 2013 Restaurant Awards and the Guardian declared him 'among the high priests of Britain's culinary revival'. He is the author of Duck & Waffle: Recipes & Stories and Toast Hash Roast Mash.

Dr Douglas Palmer is a science writer and lecturer. His books include The Neanderthal, which accompanied the acclaimed Channel 4 series, Earth Time, The Atlas of the Prehistoric World and Prehistoric Past Revealed (MB). Ian Drummond is Creative Director of the Indoor Garden Design Company alongside Pippa Robinson and David Grace. A true north London boy, Ian uses garden and horticultural design to express his understanding of city living. He has worked on art installations for the Barbican Art Gallery and on the Living with Nature Exhibition at St Pancras Station. He has also scooped up an impressive array of medals for design schemes and interior gardens at the RHS Chelsea Flower Show. Ian's work mainly focuses on creative projects - film premieres, fashion shows and charity functions, including the BAFTAs and the annual Sir Elton John Aids Foundation's White Tie and Tiara Ball. He is also chairman of eFIG (European Federation of Interior Landscape Groups) and an RHS committee member.
One of Ireland's best-loved chefs, Kevin Dundon can usually be found busy at work in the Dunbrody Country House kitchens and cookery school. A chef with a love of locally sourced produce, he has cooked for many well-known celebrities during his career, including Queen Elizabeth II, President Bush and Bono.In 1997, Kevin and his wife founded the Dunbrody Country House Hotel, which has become synonymous with contemporary Irish country house cooking.
