Thiago Castanho

Thiago Castanho's love of food and local ingredients began at home, when his father decided to turn their living room into a small restaurant to support the family. Now 26, Thiago is one of the most acclaimed chefs of the new Brazilian cuisine with two restaurants: his first, Remanso do Peixe; and his new one, Remanso do Bosque, on the edge of a national park.Thiago's cuisine moves easily from tradition to modernity. He manages to combine comfort food and the diverse flavours of Brazil in a unique way. His food is in tune with nature, showing great love and respect for the environment and for local producers. Thiago featured on Michael Palin's BBC series Brazil.

Dr. Wynnie Chan is a Public Health Nutritionist, she is also the editor of four books in the McCance and Widdowson's The Composition of Foods series. She has written numerous articles for consumer magazines and newspapers, as well as scientific journals. She appears frequently on TV and radio programmes.

Gee Charman was raised and educated in Berkshire, where her family home still remains. She currently lives in London but spends as much time as possible in Berkshire where her mother's large country kitchen calls. Gee owns her own catering company and also works as a home economist.

Bobby Chinn

Coming from a family of great cooks Bobby has always been passionate about food and he was taken under the wings of various cutting edge San Francisco chefs - Hubert Keller, Gary Danko, and Traci des Jardine where he learnt his trade. He now owns his own restaurant in Hanoi and his series on Asia is being filmed for Discovery. He has also appeared in the UK on BBC2's Saturday Kitchen and Full On Food.
Xanthe Clay

Xanthe Clay is a talented chef and the main food columnist for The Saturday Telegraph. Xanthe's former Saturday Telegraph column, Reader's Recipes (a short, single column weekly piece), ran for eight years. It was the inspiration behind her previous book, It's Raining Plums, which was voted one of the most useful cookbooks of all time by Waitrose Food Monthly.
Maxwell Colonna-Dashwood

Maxwell Colonna-Dashwood is a champion barista who has competed in the World Barista Championship and has won the UK Barista Championship three times. He is co-owner of an award-winning independent roastery and coffee shop. Having travelled the world studying the science and art of coffee, Maxwell co-authored Water For Coffee with Dr. Christopher H. Hendon of MIT, a study on the chemical interactions between water and coffee, and how they can be manipulated to create a higher-quality cup. He frequently works with coffee experts around the world throughout various parts of the coffee chain to develop new and better technology for the enjoyment of coffee.
