Annie Bell

Annie Bell, having begun her career as a chef, has been a full-time cookery writer and author for more than ten years. She has written a number of books including Annie Bell's Vegetable Book, and Evergreen shortlisted for the Andre Simon and Glenfiddich Awards. She collaborated with the architect John Pawson to write Living and Eating and more recently has written Gorgeous Cakes. Maxwell Colonna-Dashwood

Maxwell Colonna-Dashwood is a champion barista who has competed in the World Barista Championship and has won the UK Barista Championship three times. He is co-owner of an award-winning independent roastery and coffee shop. Having travelled the world studying the science and art of coffee, Maxwell co-authored Water For Coffee with Dr. Christopher H. Hendon of MIT, a study on the chemical interactions between water and coffee, and how they can be manipulated to create a higher-quality cup. Michael Freeman

Michael Freeman, professional photographer and best-selling author, was born in England in 1945, took a Masters in Geography at Brasenose College, Oxford University, and then worked in advertising in London for six years. In 1971 he made the life-changing decision to travel up the Amazon with two secondhand cameras, and when Time-Life used many of the pictures he came back with, he embarked on a full-time photographic career.Since then, working for clients that include all the world's major magazines, most notably the Smithsonian Magazine (for which he has shot more than 40 stories over 30 years), Freeman's reputation as one of the world's leading reportage photographers has been consolidated. Nargisse Benkabbou was raised in Brussels, where she grew up in a strongly food-oriented family that continually nurtured her connection with her roots and country of origin, Morocco.After living in Brussels and Paris, Nargisse moved to London a few years ago to pursue her education in Politics only to realize that her love for cooking and food was a real passion. Timothy d'Offay

Over 20 years ago while living in Japan's ancient capital Kyoto, Timothy d'Offay became fascinated by tea culture and the tea growing areas around the city. Using Japan as a base, he soon started to explore the tea traditions of Taiwan, Korea, and Hong Kong as well. These experiences led him to start importing tea in the late 1990s from the people and places he had visited and in 2000 he co-founded East Teas at Borough Market with the tea expert Alex Fraser.
