For its founders - Henry Dimbleby, John Vincent and Allegra McEvedy - the aim was to change the face of fast food, by bringing fresh, wholesome cooking to the high street. Six months later, Leon was named the Best New Restaurant in Great Britain at the Observer Food Monthly Awards. The menu is based around bold flavours, using simply-cooked fresh, local, natural ingredients with an emphasis on seasonal dishes; it also reflects how our eating habits change as the daylight house get longer and shorter.Leon Naturally Fast Food is again a book of two halves. The first half is Fast Food, which contains recipes for every occasion that take a maximum of 20 minutes to prepare: from a work day breakfast and children's meals to simple suppers and party food. The second half is Slow Fast Food which contains things that can be made in advance when you have time, to enjoy when you don't have time. There is plenty in both halves for both the experienced cook and the culinary adventurer in search of inspiration.LEON's food message is a simple and honest one - cook and eat with the best ingredients available and don't forget the naughty bits that are so necessary for a fully-rounded life.

Amber Locke

Amber Locke is based in Derbyshire and runs her fruit and veg-based design business from her studio at home. She offers a bespoke commercial design service and also sells a range of her designs as limited edition prints online at www.ambaliving.com. Part of the 'fresh talent' team on Jamie Oliver's Food Tube, Amber recently held her first exhibition at the gallery in the Anthropologie store on London's Kings Road and held live design demonstrations in the store and at Whole Foods in High Street Kensington. Arthur Potts Dawson

Arthur Potts Dawson is passionate about good food, eating well and making the most of what's fresh, local and seasonal. He was trained by the Roux brothers, Rowley Leigh and Pierre Koffmann. He went on to be head chef for Ruth Rogers & Rose Gray at the River Café, the Soho House Group at Cecconi's, Jamie Oliver at Fifteen and Hugh Fearnley-Whittingstall at River Cottage HQ. He founded London eco-restaurants Acorn House and Water House for the Shoreditch Trust, and the annual Mrs Paisley's Lashings pop-ups with Jo Wood.Arthur has appeared on the BBC's Market Kitchen on numerous occasions, had his own show in C4's latest Food Fight season alongside Gordon, Jamie,Hugh and Heston, and was featured on C4's The People's Supermarket documentary this Spring. Arthur lives in London and Somerset with his partner and two children, and he's working on his next restaurant.

Blanche Vaughan

Blanche Vaughan is a food writer and chef who worked at the River Cafe, Moro and St John. She has written for the Guardian and published four books with Weidenfeld & Nicolson including One Pot and Egg. She wrote itsu: the cookbook with Julian Metcalfe. Blanche is Food Editor at House & Garden.

Diana Henry

Diana Henry has a weekly column in the Sunday Telegraph, writes for BBC Good Food, Red and House & Garden, and is a regular broadcaster on BBC Radio 4. Izy Hossack

Izy Hossack is a 20-year-old blogger and Instagram sensation, and her hit blog topwithcinnamon.com is the go-to place for delicious sweet and savoury recipes on both sides of the Atlantic. She has an impressive fan base, with more than 220,000 followers on Instagram (@izyhossack). Much of Izy's food is inspired by her Italian-American heritage. Many of her recipes are gluten free and/or vegan. Izy collaborates with many different publications and brands including JamieOliver.com, IKEA, Cuisinart UK, Green & Black's, Remeo Gelato, theKitchn.com, Food52.com, Miss Vogue and SORTED to name a few. Izy has appeared on Channel 4's 'Daily Brunch' and has made videos for Waitrose TV, Endemol Shine's new channel Wild Dish and for Tesco Real Food. The Times Magazine recently named Izy as one of the world's most followed foodies and she has been featured in British Vogue. Her first cookbook Top With Cinnamon was published by Hardie Grant in the UK and Rizzoli in the US in Autumn 2014, and reissued in paperback in Spring 2016 as Everyday Delicious. As well as being a food writer, Izy is a photographer and food stylist, and styled and photographed all the food for her books herself. Jacqui Lynas is a state registered dietician with a specialist interest in heart-disease prevention. She works for the Family Heart Association and is an acknowledged expert in her field with over 20 years' experience. She is a regular contributor to medical textbooks, journals and magazines, as well as being a popular speaker at scintific meetings.

Jean-François Mallet

Jean-François Mallet trained at the prestigious Ferrandi culinary school in Paris, before deciding to follow his passion for photography. He now specialises in food photography.

Joanna Farrow

Joanna Farrow loves having fun with her food, having giving cakes and cookies a whole new look in Dress Your Cake and Dress Your Gingerbread. A home economist and food writer, she has also contributed to numerous food magazines and has written a number of other titles, including Ready Steady Cook for Kids, Good Fast Family Food, Cake and Peek-a-boo Cakes.

John Vincent

John Vincent is co-founder of Leon, which now has more than 45 restaurants across the UK (and two in Amsterdam). He wrote the Leon Naturally Fast Food with Henry Dimbleby, Leon Family & Friends with Kay Plunkett-Hogge and Leon Happy Salads and Leon Fast & Free with Jane Baxter. He believes food has the power to delight, invigorate and bring people together. He thinks that our relationship with food should be positive and joyous and that we need to listen more carefully to our gut, eat more good fats, less sugar. And a whole lot more plants.

Joy Skipper

Joy Skipper is a qualified nutritional therapist specialising in Sports Nutrition. She has a BSc (Hons) in Nutritional Therapy from The Centre of Nutrition Education and Lifestyle Management, following her graduation from the world-renowned Institute of Optimum Nutrition in 2009. She writes extensively on healthy food for a number of magazines, including Waitrose Kitchen, Delicious Magazine, Weight Watchers Magazine and BBC Good Food and has authored several books.

Julian Metcalfe

Julian Metcalfe, co-founder of global success Pret A Manger, is dedicated to his next crusade, itsu... a revolutionary and refreshing take on affordable, healthy food. itsu's delicious but light menu and confident flavours are attracting millions of loyal fans. Michael van Straten is an osteopath, naturopath, acupuncturist and nutritional consultant, and an accomplished broadcaster and author of more than 30 books. Michael also presented the popular Bodytalk programme on LBC Radio for over 30 years.Michael is a past Governor of the British College of Naturopathy and Osteopathy and served two terms as President of British Naturopathic and Osteopathic Association. His books have sold in their millions, and include the bestselling series of Superfoods books.

Nicola Graimes

Nicola Graimes has been editing and writing books on the subject of healthy nutrition for children for the past 19 years. Nicola is particularly interested in healthy eating, organic food and children's diets, and her unpretentious, contemporary style of cooking is very much in touch with the requirements of modern parents.Nicola Graimes has had many books published in the UK including The Baby Cookbook, The Toddler Cookbook, Foods that Heal Cookbook, and The Vegan Cookbook. Nicola was editor of the UK's Vegetarian Living Magazine and The Vegetarian, the monthly magazine published on behalf of The Vegetarian Society. She has also written for The Sunday Express and is a member of The Guild of Food Writers. Nicola Graimes is a young, contemporary cook and is in touch with the requirements of modern parents. She knows what works and what doesn't, and is fully up-to-date with the latest nutritional information and ingredients.
