Coronation Chicken

 

 

“This is my own take on coronation chicken, containing some of the key flavours but with more fresh vegetables added for crunch and flavour. (I could never stand the ‘squishy’ consistency of a lot of the coronation chicken I have been served in the past!) The slight cheat in this is using bought, pre-cooked chicken, but of course it would be an ideal recipe for using up roast chicken leftovers, too. I serve this with baked potatoes and salad, or just with pitta bread or crisp breads and salad. 350g (12oz) pre-cooked chicken

breasts, skinned and finely chopped

1 red pepper, deseeded and finely chopped

2 spring onions, finely sliced

2 tablespoons light mayonnaise

6 tablespoons fat-free Greek yogurt

2 tablespoons mango chutney

2 teaspoons mild curry powder

1 teaspoon sweet or smoked paprika

salt and pepper

 

1. Simply mix all the ingredients together thoroughly, season with salt and pepper and serve.

 

NOTE This is a great recipe to use up some of those turkey leftovers at Christmas. You could also substitute the chicken for cooked prawns.
