Seaweed Relish
From The Seaweed Cookbook:

This recipe is inspired by Gentlemen’s Relish, which is basically an anchovy butter that is great to have on hand to add an instant hit of amazing flavour, for example at the end of cooking a steak. This version is also delicious on toast with an aperitif.

You’ll need

  • 150g butter
  • 2 tablespoons mixed dried seaweed flakes
  • 25g anchovies, finely chopped
  • pinch of cayenne pepper
  • pinch of ground cinnamon
  • pinch of grated nutmeg
  • pinch of ground ginger
  • 25g tamari
  • toasted sourdough, to serve

Method:

Melt the butter in a small saucepan over a low heat and then mix in all the other ingredients. Pour into a shallow butter dish and refrigerate. To serve, remove the relish from the refrigerator and bring up to room temperature. Toast slices of sourdough and spread with the seaweed relish.
