50 g (1¾ oz) honey-nut flake cereal
2 eggs, lightly beaten
125 ml (4 fl oz) milk
½ teaspoon ground cinnamon
4 brioche slices
2 tablespoons salted butter
2 tablespoons maple syrup, to serve (optional)
Measure the cereal into a bowl and lightly crush with a rolling pin.
Combine the eggs, milk and cinnamon in a separate wide, shallow bowl.
Dip the slices of brioche into the egg mixture and turn to coat, then coat in the crushed cereal.
Melt the butter in a large frying pan over a medium heat and gently fry the brioche slices for 3–5 minutes on each side until golden and crisp. Serve with maple syrup.
