Ice
3 parts sherry – for a drier drink, use fino or manzanilla, or for a richer, nuttier result, try oloroso
5 parts tonic water
A large wine glass
A thin piece of lemon peel
Add the ice to the glass, pour over the sherry and then slowly pour in the tonic water. Squeeze the lemon peel over the top of the drink to express the oils (see page 22 of 60 Second Cocktails) and add to the glass to garnish.
