Apple Pie… The Cocktail (VG) from Wojtek’s Bistro

“A classic Polish cocktail. I remember watching my parents and grandparents sipping this when I was young and it seemed the height of sophistication. The origins of the name are unclear, but the point is that the apple juice obscures the alcohol and makes this go down easily. Use good-quality juice for a nicer drink and you really should use Polish Zubrowka vodka for authentic flavour.” Wojtek van Portek, author of Wojtek’s Bistro

Makes 1

100ml (3½fl oz) best-quality apple juice

50ml (2fl oz) Zubrowka vodka

1 teaspoon freshly squeezed lemon juice

Ice cubes

To garnish

Lemon slice, basil sprig

Put the apple juice, vodka and lemon juice into a glass and stir to mix. Add ice cubes to top up.

Garnish with a lemon slice and basil sprig and serve.
