Shrimp Po’ Boys from Cook Smart Air Fryer

1 tablespoon Cajun seasoning

50 g (13/4 oz) plain flour

1 egg, lightly beaten

50 g (13/4 oz) dried breadcrumbs, ideally panko

200 g (7 oz) raw king prawns cooking oil spray

For the remoulade sauce

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika squeeze of lemon juice

Hot sauce, to taste

Salt and pepper

To serve

Warmed baguette

Shredded lettuce

Sliced tomato

Lemon wedges

Preheat the air fryer to 200°C/400°F.

Mix together the Cajun seasoning and flour in a shallow dish, put the egg in another dish and the breadcrumbs in a third. Coat the prawns in the flour and gently tap off any excess, then dip into the egg, then finally toss through the breadcrumbs.

Place the prawns on the crisp plate inside the air fryer drawer, spray with oil, then cook for 6 minutes.

To make the sauce, mix the first 4 ingredients in a bowl, then add salt, pepper and hot sauce to taste.

Serve the prawns, drizzled in some sauce, in a warmed baguette along with the lettuce and tomato, with extra sauce for drizzling and lemon wedges for squeezing over.

Tip

Panko are lightly baked, coarse breadcrumbs, which give all foods coated with them a really shattering crunch. You’ll find them in all larger supermarkets.
