150 ml (. pint) unsweetened full-fat coconut milk
300 g (10 oz) frozen mango
Serves 2-4
Place the coconut milk and mango in a high-speed blender and blend until smooth.
2 Eat immediately for soft-serve ice cream, or freeze it for a few hours or overnight if you prefer it firmer. If doing so, remove from the freezer for 10 minutes before scooping to help it soften.
