PREVENT BURNOUT


Coconut & Cranberry Energy Bars

One cup of cranberries gives you roughly 5g (oz) of fibre. They are also high in vitamin C and B vitamins which are required for energy, so these bars are an excellent snack for a busy day.

 

Makes 9

90g (3.oz) desiccated coconut

125g (4óoz) ground almonds

85g (3oz) oats

2 tablespoons honey

1 tablespoon coconut oil

125g (4óoz) dried cranberries

 

1. Place the coconut, almonds and oats in a food processor and blitz until finely chopped and mixed together. Add the honey and coconut oil and process for another minute until the mixture forms a squidgy dough. Stir in the cranberries.

2. Line a 20cm (8in) square baking tin with baking paper. Spoon the mixture into the tin and squish it into an even layer with your hands. Pop in the freezer for 30 minutes to firm up.

3. Cut into 9 bars. Store in an airtight container for up to two weeks.
