50g (1¾oz) reduced-fat vanilla ice cream
50g (1.oz) fat-free Greek yogurt
1 meringue nest, broken into small pieces
100g (3óoz) strawberries, hulled and quartered
1. Put the ice cream and yogurt in a small bowl and mash with a fork until you have a smooth whippy ‘cream’.
2. In a pretty glass or bowl, create layers of the ice cream mix, meringue and strawberries. Serve immediately.
NOTE Try this with different berries, such as blueberries and raspberries, or even some diced mango.
